Le Relais de Flavigny

WHEN visiting a place like Flavigny sur Ozerain it would be unthinkable not to try the gastronomic delights.

Le Relais de Flavigny offers a warm welcome in this mediaeval village where they serve authentic French cuisine.

Your senses will quiver with delight and be tantalised by the thought of Escargots de Bourgogne, les cuisses de Grenouilles, les Oeufs en Meurette and Jambon Persillé, Feuilleté de Saumon and Émincé de Charolais. To follow fromage d’Époisses and Crème Brûlée à l’Anis.

Les Oeufs en Meurette (eggs in wine)
8 eggs
100g/1/4lb unsmoked bacon, minced
1/2 bottle red wine
20g/1 1/2 tbsp butter
20g/7 tbsp flour
1/3 cup of water
1 onion and 3 shallots minced
1 bouquet garni
Baguette (French bread) sliced
Garlic
Salt and pepper

While stirring constantly, brown the flour lightly in the melted butter.
Add the bacon, the bouquet garni, the wine, the water, the minced onions and shallots.
Add salt and pepper to taste.
Cook for 30-40 minutes.
Remove the bouquet garni and strain the sauce.
Fill four individual oven proof dishes to 2/3rds full.
Break two eggs into each and bake at 200°C/375F until the whites are cooked but the yolks still liquid.
Sprinkle with salt and pepper and serve with slices of French bread rubbed with garlic.

    The Hotel-Restaurant Le Relais in Flavigny sur Ozerain closed definitely on 31 march 2011.
    It will be replaced in may 2011 by the Restaurant de l’Abbaye:
